Directions: 1. Open the can of salmon and drain the liquid off of it. 2. Pour the salmon in a bowl and pick through it 3. remove the skin and any bones you see.
4. Mix the crushed cracker crumbs, eggs, corn meal, and seasonings into the salmon.
5. Shape into uniform size patties about 1/2 inch thick. 6. The mixture should stick together well. 7. Pour enough oil in a pan to cover the bottom and heat to medium. 8. Place the salmon in the pan. Fry on each side until golden brown. 9. Remove to a paper towel lined plate.
