Ingredients:
5 to 6 potatoes
3 cups milk
1 cup water
2 cups shredded cheddar
5 green onions chopped up (including the white part)
1 package bacon pieces/strips (I use oscar myer fully cooked)
1 16 oz container sour cream
1 1/2 sticks butter

1. Cut potatos up into cubes (boil and drain water off and pour potatoes back into large soup pot)
2. Add butter to the cooked potatoes and mash them
3. Add water, milk, bacon and green onion
4. Cook on low to medium heat till simmering (stirring often)
5. Then add cheese stirring until melted.
6. Add sour cream and cook until heated (do not boil)
7. Serve topped with additional cheese,
sour cream, and bacon.
*Serves 6-8*
I made this for supper last night and it was great! I wouldn't change anything about the recipe. It is easy, fairly quick to make, and inexpensive for cooking for a large group.-Kay
